Chef Reggiani wins the Clerici trophy

Modena won yesterdays’s episode of the “La prova del cuoco”, a famous TV show broadcast on Rai Uno and conducted by Antonella Clerici. The Laghi di Campogalliano restaurant, headed by chef Paolo Reggiani, representing our city and Emilia Romagna challenged Puglia in the enogastronomic “duel”, bringing the best of Modenese specialities under the spotlight. Giuseppe Bigazzi, a well-known culinary expert of the program, declared the Laghi restaurant staff as the best. «A vistory for us, but most of all for the products of our province – said chef Reggiani – yesterday we brought: the traditionally made mafaldina al torchio with an old-fashioned ragout, duck breast with figs caramelised with tradiutional balsamic vinegar, and, under glass, organic White cow Parmigiano, traditional balsamic vinegar, goat cheese of Val Dragone, raw milk pecorino cheese of Frignano, morette cherries of Vignola, the Bigarò duroni cherries, which even Clerici found irresistible, tigelle, tortellini, borlenghi and bread of Villa Sorra. We were also accompanied by three young girls of the Dama Vivente association of Castelvetro».
